A requested assortment of recipes made at one time or another by club members

We hope you enjoy these recipes as much as our club members do. This is the food that everyone asks "can I have that recipe?" You might recognize some of them if you have been to any of our shows, or get-to-gathers.


White Chili - Pat Meyer - 6-8 servings
15 –oz. can chickpeas of garbanzo beans, undrained
15-oz. can small Northern beans, undrained
15-oz. can pinto beans, undrained
1 or 2 lb. bags frozen corn
1 ½ cups shredded cooked chicken
2 Tbsp. minced onion
1 red bell pepper, diced
3 tsp. minced garlic
3 tsp. ground cumin (don’t leave this out)
½ tsp. salt
½ tsp. dried oregano
2 15 –oz. cans chicken broth
1.  Combine all ingredients in slow cooker.
2.  Cover. Cook on low 8-10 hours, or high 4-5 hours (Crockpot)
3.  Serve with warmed tortilla chips topped with melted cheddar cheese (also salsa, sour cream)

Chilled Vegetable Salad
Stir together the following ingredients and boil 5 minutes:
1 cup sugar (I use Splenda)
¾ cup apple cider vinegar
½ cup vegetable oil
Allow above ingredients to cool 30 minutes
Mix together in a large bowl:
1 medium green pepper diced
1 medium onion diced
3 stalks of celery finely diced
1 medium size jar of diced pimento, undrained
1 can peas (I use early sweet), drained
1 can French-style green beans, drained
1 can shoe peg corn, drained
¼ teaspoon pepper and ½ teaspoon salt optional
Pour on dressing and refrigerate at least 8 hours before serving

Calico Beans – Crockpot Recipe
16 oz can kidney beans
16 oz can small white beans
16 oz can black-eyed peas
16 oz can Great Northern beans
16 oz can Pork and Beans 
These beans are just a suggestion - you can put any kind in - drain all of them except regular pork and beans
 3/4 cup ketchup
1 onion chopped
2-3 tsp. cider vinegar
1/2 cup packed brown sugar
1 tsp ground mustard
3/4 cup BBQ sauce
Bacon if desired - I use the dried, chopped kind

You can put chopped green red or green pepper in if you want - I didn't
 Mix all together and put in a crock-pot, Cook low 6 hours or high 4 hours
